Masala to coat the cauliflower florets with:
In a bowl combine turmeric powder

Cumin powder

Coriander powder

Black pepper powder

Garam masala powder

Kashmiri red chilli powder (this is not very hot)

Garlic powder

Give it a mix
Roasting Cauliflower

Preheat your oven to 400F or 204C

Cut cauliflower florets to medium sized pieces. Spread the florets on a tray lined with parchment paper
If you want to blanch the cauliflower (to get rid of worms and clean the cauliflower), make sure to dab it dry before placing the florets on the tray. -
Coat the florets with any oil of your choice. I used avocado oil

Make sure to coat the florets nicely with oil, so they brown well

Season well with salt and rub it well with your fingers

Spread the florets evenly on the tray and bake till golden brown (20-30 min)

Sprinkle the dry masala (generous amounts), add some lime juice and coat well using a spatula.

Bake for another 2-3 minutes

Garnish with chopped coriander leaves (optional)
