To the chicken add turmeric powder

Cumin powder
-
Coriander powder
-
Garam masala powder
-
Black pepper powder
-
Kashmiri red chilli powder
This chilli powder is not very hot -
Plain unsweetened yogurt
-
Crushed ginger and garlic
-
Mix well and set aside
-
Set a pan on medium heat and add oil followed by ghee
-
Once the ghee melts, add chopped onion and chopped curry leaves
-
Stir fry the onion till they turn translucent (~30-45 sec). Add slit green chillies
-
Add the marinated chicken
-
Rinse out the spices in the bowl with ~2 tbsp. of water

Stir fry the chicken till the raw smell of spices and ginger garlic paste is gone. The chicken turns slightly golden brown and oily
