Description

This is a 2 ingredient Keto Uttapam! It is totally vegetarian and is made without any eggs or cheese. Include this delicious keto breakfast in your weight loss journey!

Ingredients
  • 1 cup Almond Flour (112g)
  • 4 teaspoons Psyllium husk
  • 1/2 teaspoon Salt
  • 1 teaspoon Lime juice (or vinegar)
  • 1/2 teaspoon Eno (or baking soda)
  • 1 cup Water (240ml)
  • Veggies (shredded carrot, finely chopped onions, coriander leaves, green chillies etc)
Instructions
  1. In a big bowl combine one cup or 112 g of almond flour, 4 teaspoons of psyllium husk, half a teaspoon of salt, 1 teaspoon of lime juice or white vinegar, half a teaspoon of Eno or baking soda and 1 cup or 240 ml of water

  2. Give it a mix and Let it rest for 5 to 7 minutes, after which the said him has is going to become jelly like and will help in binding the almond flour together

  3. Use a good nonstick pan for this recipe. Brush some oil or ghee on the surface of the pan and spread a quarter cup of the batter on it to form an approximately 8 inch wide circle

  4. Cover the uttapam with a lid for approximately two minutes

  5. Spread some veggies like shredded carrot, finely chopped onion, chopped coriander leaves, and green chilies on the uttapam.

  6. Sprinkle some black pepper powder and flip the uttapam when it turns golden brown in color

  7. Let the other side cook for approximately two minutes and done!

  8. Enjoy this with some peanut chutney or hot sauce or it tastes delicious as it is!
