Keto Chicken Curry using a pressure cooker

Description

If you want to make a quick delicious keto chicken curry using your pressure cooker, this recipe is for you! 

Ingredients
  • 3 tablespoons Oil (Use any neutral oil. I use avocado oil)
  • 1/2 teaspoon Cumin seeds
  • 1 Bay leaf
  • 2 Green cardamoms
  • 1 Black cardamom
  • 5 Cloves
  • 1 Cinnamon stick (1 inch)
  • 1 Star Anise
  • 80 grams Onion (finely chopped)
  • 3 cloves Garlic (finely chopped or crushed)
  • 1 inch Ginger (finely chopped or crushed)
  • 180 grams Tomato (chopped)
  • 1/2 teaspoon Turmeric powder
  • 2 teaspoons Coriander powder
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon Kashmiri red chilli powder
  • 1/2 teaspoon Normal red chilli powder
  • 1 teaspoon Garam masala powder
  • 1 kilogram Chicken (with bone)
  • 1 tablespoon Coriander stema
  • 1.5 cup Water
  • 1/4 teaspoon Black pepper powder
  • 1 tablespoon Ghee
  • 1/4 cup Coriander leaves
  • 1/2 tablespoon Kasuri Methi (Dried fenugreek leaves)
  • Lime juice (to taste)
  • 1 teaspoon Salt (or to taste)
Instructions
  1. Add 2 tbsp. oil to a pressure cooker pan set on medium heat

  2. Add cumin seeds

  3. Bay leaf

  4. Green cardamoms

  5. Black cardamom

  6. Cinnamon stick

  7. Cloves

  8. Star anise

  9. Stir fry for 15-20 sec until they turn aromatic. Add chopped onions

  10. Stir fry the onions for 1 minute and add garlic

  11. Add ginger

  12. Stir fry for another minute and turn down the heat. Add turmeric powder

  13. Coriander powder

  14. Cumin powder

  15. Kashmiri red chilli powder

  16. Normal red chilli powder

  17. Garam masala powder

  18. Stir fry for a few seconds, add a splash of water if you need to, so the masala's don't burn

  19. Add chopped tomatoes

  20. Add some salt to taste. Give it a quick stir and place a lid on for 2 minutes so the tomatoes sweat

  21. Press down on the tomatoes with a spatula so it turns pasty

  22. Add 1 tbsp, of oil and stir fry the paste for 1 minute

  23. The paste should start oozing oil

  24. Add chicken

  25. Stir fry for 5 minutes over medium high heat

  26. Add coriander stems and stir

  27. Add water and salt to taste

  28. Cook for 1-2 whistles or 15 min under pressure

  29. Add salt to taste

  30. Add black pepper powder

  31. Add ghee

  32. Add fresh lime juice to taste

  33. Add kasuri methi 

    Crush it in between the palms of your hands for more flavor
  34. Add coriander leaves

  35. Enjot this with keto roti or keto rice
