(Net carbs per serving: 1.7g)

Ingredients
    Marinade
  • 7 pieces Goat chops (500g, you can use lamb chops as well)
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • 1/2 teaspoon Salt
  • Dry Masala Mix
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Fennel seeds
  • 1 tablespoon Black peppercorns
  • Other ingredients
  • 2 tablespoons Cooking oil (I use avocado oil)
  • 2 inches Cinnamon stick
  • 6 Green chillies
  • 1 Onion (medium, finely chopped)
  • 3 Dried red chillies
  • 12 Curry leaves
  • 1 tablespoon Garlic (finely chopped)
  • 1/2 teaspoon Garam Masala Powder
  • Lime juice (to taste)
  • Salt (to taste)
Instructions
  1. To the mutton (goat) chops add salt, turmeric powder, and red chilli powder. Mix well

  2. Add the chops to a pressure cooker along with enough water to submerge the pieces (I used 1.5 cups) and pressure cook until they turn tender. Don’t discard the mutton stock

In my pressure cooker, 20 min under pressure is enough to tenderize the meat.
  3. Making Dry Masala Powder
  4. Dry roast black peppercorns, cumin seeds, and fennel seeds on medium/low until they turn aromatic. This should take ~2-3 min

  5. Once the seeds have cooled down, grind them into a fine powder

  6. Set the powder aside

  7. Making Mutton Chops Curry
  8. Set a large pan on medium heat and add 2 tbsp. of oil

  9. Add cinnamon sticks, dried red chillies and 6-7 curry leaves

  10. Give it a quick stir

  11. Add onions and garlic along with some salt (to taste)

  12. Stir fry the onions for 1 min or until they turn translucent

    Don’t brown the garlic
  13. Add the mutton chops along with the stock

  14. Place the lid on and let the mutton cook for ~3 min

  15. Add slit green chillies

  16. Keep stirring until the stock gets thicker. The gravy should start to look oily

  17. Add the dry masala powder

  18. Stir for a minute

  19. Add 6-8 curry leaves, some fresh lime juice and give it a stir

  20. Finish by sprinkling some garam masala powder
