Description

Add this delicious spicy garlic mushroom stir fry to your keto diet plan! It can pair beautifully with any keto bread, wraps, or eggs.

Ingredients
  • 20 white buttom mushrooms
  • 1 tablespoon Oil
  • 2 tablespoons Butter
  • 1 tablespoon Garlic (crushed)
  • 1 tablespoon Spring onion whites (chopped)
  • 1/2 teaspoon Black pepper powder
  • 2 tablespoons Spring onion greens
  • 2 tablespoons Coriander stem (chopped)
  • Red chilli flakes (to taste)
  • 1/2 Veggie stock cube (Make sure you are using a keto friendly stock cube or bouillon powder)
  • Lime juice (to taste)
Instructions
  1. Cut the button mushrooms in quarters and set aside

  2. Set a pan on medium/high heat and add 1/2 tbsp. of cooking oil and 2 tbsp. of butter

  3. Add 1/2 a veggie or chicken stock cube. Break and mash the stock cube and mix well with the butter

  4. Add spring onion whites along with mushrooms

  5. Stir fry the mushrooms for approximately 6-8 min or till they brown well

  6. Move the mushrooms to one side of the pan and add 1/2 tbsp. of oil on the other side of the pan. Add crushed garlic to the oil and stir fry for 15-20 sec

  7. Mix the garlic with the mushrooms

  8. Add black pepper powder

  9. Add 2 tbsp. of chopped coriander stems (or leaves, but stems have more flavor!) and 2 tbsp. of spring onion greens

  10. Squeeze some lime juice

  11. Sprinkle red chilli flakes (to taste)
