Add this delicious spicy garlic mushroom stir fry to your keto diet plan! It can pair beautifully with any keto bread, wraps, or eggs.

Cut the button mushrooms in quarters and set aside
Set a pan on medium/high heat and add 1/2 tbsp. of cooking oil and 2 tbsp. of butter
Add 1/2 a veggie or chicken stock cube. Break and mash the stock cube and mix well with the butter
Add spring onion whites along with mushrooms
Stir fry the mushrooms for approximately 6-8 min or till they brown well
Move the mushrooms to one side of the pan and add 1/2 tbsp. of oil on the other side of the pan. Add crushed garlic to the oil and stir fry for 15-20 sec
Mix the garlic with the mushrooms
Add black pepper powder
Add 2 tbsp. of chopped coriander stems (or leaves, but stems have more flavor!) and 2 tbsp. of spring onion greens
Squeeze some lime juice
Sprinkle red chilli flakes (to taste)
