This Keto roti is soft and pliable. It pairs well with lots of different Indian curries. They are made of coconut flour and psyllium husk. They are easy to make and can be frozen and heated up anytime.
Net carbs per roti (from MyFitness Pal): 1.2g
Take 1/2 cup or 70g of coconut flour
Add 2 tbsp. or 8g of psyllium husk
Add 1/2 tsp. of salt
Mix well
Add 1.5 cups room temperature water (read the note below).
Mix well
Cover and let this rest for 20 min
Add oil
Knead into a dough
Divide into 8 portions
Grease 2 silicone mats with oil
Roll into a ~6 inch circle. You can cut it in a circular shape with a lid or cookie cutter
Heat a non stick pan to medium high heat
Cook the roti for ~2 min per side or until golden brown spots appear
You can freeze the cooked rotis and heat it up later on a pan or a microwave (~15 sec high power)
You can also freeze the rolled roti dough (raw).
