How to make Keto roti-with almond flour and xanthan gum

Description

This keto roti is made of almond flour using xanthan gum as the binding agent. Xanthum gum makes the dough easy to handle and prevents it from tearing easily. This roti has a mild taste and pairs well with indian curries.

Ingredients
  • 1 cup Almond Flour (I use the Kirkland Brand)
  • 1/2 teaspoon Xanthan Gum (I use the Bob's Red Mill brand)
  • 1/2 teaspoon Salt
  • 2 teaspoons Oil (I use Avocado Oil)
  • <1/4 cups water (room temperature)
Instructions
  1. Take almond flour in a bowl

  2. Add xanthum gum.

    A little quantity of xanthum gum goes a long way. Too much of xanthum gum will make the dough very slimy
  3. Add salt

  4. Mix

  5. Add little less than a quarter cup of water (at room temperature) and make a dough. Add the water a little bit at a time and use your fingers to knead the dough

  6. Add 1 tsp. of oil. I use avocado oil. You can also use olive oil if you wish.

  7. The dough should look smooth and slightly stretchy.

  8. Portion the dough into 4

  9. Grease both silicone mats with oil before rolling out the dough

    You can use parchment paper or wax paper too.
  10. Don't roll out the dough too thin. I could tear

  11. If the mats are greased well the dough won't stick to it

  12. I am using a 5 inch lid to cut out the rolled dough

  13. Using the scraps left over from 4 rotis you could make a 5th one

  14. Heat a non stick pan to medium high heat. Cook the roti for a minute or two on both sides

  15. When you can see brown marks come up, its done! Over cooking the rotis makes them hard

  16. The rotis feel soft. You could freeze these rotis easily and cook them later. Freeze raw rolled out dough in between parchment/wax papers so they don't stick to each other. Cook the frozen dough directly on a pan. If you freeze pre-cooked rotis, you can either heat them on a pan or in the microwave oven.
