Easy keto roti that pairs well with any Indian curry!
This is an easy and tasty keto roti made with blanched almond flour and psyllium husk. Sometimes these rotis tend to rip while rolling the dough out. I will share a tip by which you can handle the dough easily and the rotis won't tear.
Take 1 tightly packed cup or 100g of Blanched almond flour
I use the Kirkland brand of almond flour.
Add 2 tbsp. or 8g of psyllium husk
I am using the Sat Isabgol brand of psyllium husk that you can buy from almost any Indian grocery store.
Add 1/2 tsp. of salt
Mix well
Take ~1/4 cup of hot water and add little bit at a time till it forms a dough
Cover and let this rest for 5 min
Add some oil (~1 tsp.)
Knead into a dough till it doesn't feel sticky any more. Add some more oil if needed.
The dough should feel smooth and non sticky
I am using silicine baking mats to roll out the dough. You can use parchment paper as well.
Make sure to grease the mats before rolling out the dough.
Divide the dough ball into 4 portions
Make one portion into a disc like shape.
Don't roll out the dough too thin, it tends to tear easily. I am using a 5 inch diameter lid as a reference while rolling out my dough.
If the baking mats are greased well, it should come off easily.
A 5 inch diameter roti should have a thickness of approx. 1/2 cm
Don't worry your roti won't be so thick, we will thin it our while cooking it
A thick rolled out dough should come off easily. Roll it even smaller than 5 inches if needed. You can totally thin it out later
Set a non-stick skillet and set it on medium high heat. Cook the dough on one side for a minute
Flip the roti
Press down on the roti using a ball of paper towel to thin out the circumference. Make the roti as thin as you want.
~2 min per side and your roti is done
You can freeze the raw rolled out roti dough (in between layers of parchment paper). You can directly place the frozen roti on a pan and cook it.
You can also freeze cooked rotis and reheat them on a pan or in a microwave oven (~10 sec)
These rotis pair well with any Indian curry!
