How to make Keto Roti-Flaxseed Roti
This keto roti is made of flaxseeds. If you like the nutty flavor of flaxseeds, you will like this roti. This recipe gives you 6 (5 inch wide) rotis and the rotis have negligible amounts of net carbs. They pair well with Indian curries.

Ingredients
Instructions
-
Add flaxseeds to a grinder jar and grind to a fine powder
Flaxseeds are really easy to grind using a regular grinder jar -
-
-
Pour the flaxseed flour into a bowl
-
Add salt
-
Add hot water
The quantity of hot water is half the quantity of flax seeds -
Mix the dough using a spatula
-
Rest the dough for 10 min
-
Sprinkle some oil. I use avocado oil but you can use any oil of your choice
After resting the dough for 10 min, if it feels sticky thats perfect! If the dough feels dry and crumbly, add a couple of tsp. of water so it turns sticky. -
Knead the dough for a minute
-
Divide the dough into 4 portions
We will end up making 6 rotis (5 inch wide) using the scraps from the 4 portions. -
You can roll out the dough between silicone mats or parchment paper or wax paper
-
Grease both the silicone mats with some oil before rolling out the dough
-
-
Shape 1 portion of the dough into a disc like shape and roll it out to an approximately 6-7 inch wide circular shape
-
-
If both the mats are greased well, the dough should not stick to the mats
-
I am using a 5 inch wide lid to cut a circle out of the rolled out dough
-
The scraps from the rolled out dough will give you 2 more rotis. So 6 rotis in total
-
The rolled out dough should come off the mat easily
-
Cook it for 1 minute on both sides on a non stick pan set on medium/high heat
If you cook it for a long time, the rotis will turn hard and flaky -
You can freeze cooked rotis or the rolled out raw dough. Heat it up on a pan without defrosting them. You can also warm up pre-made frozen rotis in a microwave oven.
