How to make Keto Roti-with Almond Flour and Chia seeds

This keto roti is made of almond flour and chia seed powder. It is easy to make and can easily be frozen and reheated.

  1. Grind 2 tbsp. chia seeds to a fine powder

  2. Add 6 tbsp. water to it

  3. Mix well

  4. Let it rest for 10 min

  5. Add salt

  6. Add almond flour little by little and make sure all the chia seed gel is covered by almond flour

  7. Add any neutral oil and knead for a minute 

  8. Let the dough rest for 10 min

  9. Divide the dough into 3 portions. Grease silicone mats or parchment paper with oil on both sides

  10. Roll out the dough

  11. Cut in a circular shape using a cookie cutter or a lid

  12. Set a non stick pan on medium high heat

  13. Cook the roti on both sides for ~3 min or until you start to see some golden brown spots

  14. Don’t overcook the roti if not it will turn flaky

Freezing the Rotis

  1. You can freeze the rotis and heat it up later on a pan or a microwave (~15 sec high power)

  2. You can also freeze the rolled roti dough (raw). 

    Make sure to layer the rolled dough with parchment paper in between, so they don’t stick to each other
