This keto poori has the texture of a normal wheat poori and tastes delicious with this cauliflower curry!
If you are craving Poori and Alu curry on a keto diet, this recipe is for you! This keto poori has puffs up and has the texture of wheat poori. The cauliflower curry with totally remind you of Alu curry that is eaten with poori.
Combine almond flour
Coconut Flour
Salt
Xanthan Gum
1/2 tsp. of oil
Mix well
Add hot water
Mix with a spatula
Knead into a dough with your fingers
The dough should feel stiff and dry. Add 1/2 tsp. of oil and knead again
Divide the dough into 8 portions
You can either roll out the dough or use a tortilla press. I am using a tortilla press. Grease a parchment paper with some oil
Grease the dough ball with some oil
Press it down
The rolled out dough should come off easily
Heat oil to medium high heat
Test if the oil is hot enough by frying a pinch of dough ball. If the ball sizzles and floats right away the oil is of the right temperature
Put the rolled out dough into the oil
Gently press it down with your spatula. That encourages it to puff up
The first poori may not puff up (the first pancake is bad)!
The remaining poori's puffed up beautifully. Cook on both sides till golden brown
The keto pooris turn out soft like wheat pooris.
Enjoy with some cauliflower curry! This curry tastes like the alu curry normally eaten with pooris.
