How to make Keto Poori with Curry

Description

If you are craving Poori and Alu curry on a keto diet, this recipe is for you! This keto poori has puffs up and has the texture of wheat poori. The cauliflower curry with totally remind you of Alu curry that is eaten with poori. 

Ingredients
  • 1/4 cup Almond Flour (28g, I use the kirkland brand)
  • 1/4 cup Coconut Flour (30g, I use the 365 brand)
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Xanthan Gum
  • 1 teaspoon Oil (I use avocado oil)
  • 1/4 cup Hot water
Instructions
  1. Combine almond flour

  2. Coconut Flour

  3. Salt

  4. Xanthan Gum

  5. 1/2 tsp. of oil

  6. Mix well

  7. Add hot water

    Make sure the water is hot!
  8. Mix with a spatula

  9. Knead into a dough with your fingers

  10. The dough should feel stiff and dry. Add 1/2 tsp. of oil and knead again

  11. Divide the dough into 8 portions

  12. You can either roll out the dough or use a tortilla press. I am using a tortilla press. Grease a parchment paper with some oil

  13. Grease the dough ball with some oil

  14. Press it down 

  15. The rolled out dough should come off easily

  16. Heat oil to medium high heat

  17. Test if the oil is hot enough by frying a pinch of dough ball. If the ball sizzles and floats right away the oil is of the right temperature

  18. Put the rolled out dough into the oil

  19. Gently press it down with your spatula. That encourages it to puff up

  20. The first poori may not puff up (the first pancake is bad)!

  21. The remaining poori's puffed up beautifully. Cook on both sides till golden brown

  22. The keto pooris turn out soft like wheat pooris.

  23. Enjoy with some cauliflower curry! This curry tastes like the alu curry normally eaten with pooris.
