How to make Keto Pizza

This keto pizza crust comes together in no time and is light, crisp and soft in the middle. I have combined the flavors of yeast, olive oil, basil, oregano, tomatoes and cheese so the pizza tastes a lot like real pizza.

  1. Pre heat your oven to 350F or 180C

  2. Add 100g paneer to a blender jar along with salt, xanthan gum, garlic powder, dried basil leaves, oregano, vinegar, yeast and water

    Yeast is added for getting the signature pizza flavor and not for rising the dough. Sugar is needed for yeast to bloom which cannot be done on a keto diet.
  3. Blend to a smooth paste

  4. Transfer the paste to a large bowl and rinse out the blender jar with 2 tbsp. of water

  5. Add baking soda

  6. Add 1 cup almond flour and mix with a spatula

  7. Add another 1/4 cup of almond flour and knead the dough with your hand

  8. Coat the dough with 1 tbsp. extra virgin olive oil

  9. Press down the dough into a 8-9 inch circle. Use a 10 inch wide parchment paper for reference

  10. Roll in the circumference for a typical pizza shape

  11. Poke holes with a toothpick on the dough

  12. Bake on the middle rack till golden brown or till the circumference is crisp. It should take ~15-20 min 

  13. Transfer the pizza onto a wire rack without the parchment paper

    This helps the base to cook through and crisp up
  14. Use a pizza sauce that is sugar free

  15. Spread pizza sauce

  16. Sprinkle some parmesan cheese

  17. Add mozarella cheese

  18. Drizzle some extra virgin olive oil. Also coast the elevated crust in the circumference with olive oil

  19. Sprinkle some red chilli flakes (optional)

  20. Add some fresh basil leaves

  21. Bake for 3-5 min on the lower rack in the oven

  22. Add few more fresh basil leaves

  23. Let the pizza rest on the wire rack for 2 min after taking it out of the oven before placing it on a plate. 

    If you place the pizza on the plate right away the bottom of the pizza gets soggy. Slice the pizza into 4 pieces
  24. The pizza has a slightly crisp texture and soft in the center

  25. The base is golden brown and crisp
