This is a simple and quick preparation with paneer. My mom taught me this and I am excited to share it with you!

Grate the paneer. You can also crumble it (if using soft homemade paneer)
Set a pan on medium heat and add oil
Add cumin seeds. Once the seeds start to splutter, add onion
Stir fry the onions until they turn translucent (~1 min)
Stir fry until the tomatoes turn mushy (~2 min)
Add a handful of coriander leaves (chopped coriander stems would taste even better!)
Give it a quick stir
Turn down the heat and add the grated paneer
Stir for ~1 min
Add black pepper powder and a generous amount of lime juice
Garnish with fresh coriander leaves
Finish with a knob of butter (optional)
