Description

Keto okra fry or keto bhindi fry is tasty curry that can be made in less than 15 min with just a handful of ingredients.

Ingredients
  • 400 grams Okra (or bhindi, cut in 1/2 cm pieces)
  • 1/2 teaspoon Cumin seeds
  • 3 tablespoons Oil
  • 8 Curry leaves
  • 1 tablespoon Ghee
  • 2 cloves Garlic (chopped)
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin powder
  • 1 teaspoon Red chilli powder
  • Red chilli flakes (to taste)
  • Lime juice (to taste)
  • Salt (to taste)
Instructions
  1. Wash the okra/bhindi throughly and dry it on a paper towel. The drier the okra the less slimy they will turn out!

  2. Add 2 tbsp. of oil and salt (to taste) to the okra

  3. Break up any okra clumps with your fingers

  4. Set a pan on medium heat and add 1 tsp. oil

  5. Add ghee

  6. Once the ghee melts, add cumin seeds, curry leaves and turmeric powder 

  7. Once the cumin seeds start to splutter, add the okra pieces 

     
  8. Stir fry the okra for 6-7 min or till they turn slightly dark green and shrink

  9. Move the pieces to one side and add 2 tsp. of oil

  10. Add chopped garlic in the oil and stir fry for 30 sec

  11. Mix the garlic pieces with the okra and stir fry for 2 min

  12. Add cumin powder and red chilli powder and stir fry for 1 min

  13. Add salt to taste, lime juice and red chilli flakes 

  14. Mix and done!
