Ingredients
Instructions
-
Wash and dry the okra thoroughly and cut them into 1/2 cm discs
-
Set a pan on medium heat and add 3 tablespoons of cooking oil and half a teaspoon of cumin seeds
-
Once the seeds start to splutter, add okra
-
Add a quarter teaspoon of turmeric powder, with your spatula try to break up the little okra towers that are formed when you cut them and keep stir frying them for approximately 8 to 10 minutes.
What we want is that the sliminess from the okra vanishes and the okra turns into a darker green color -
Move the okra to one side of the pan add a little bit of oil into which add one large clove of garlic finely chopped.
If we had added garlic in the beginning of the recipe by now you would have little charred bits of garlic in your curry! -
Add in one and a half teaspoons of coriander powder, 1 teaspoon of red chili powder, (you could add in kashmiri red chilli powder if you don’t like it too hot), add some salt to taste and give that a stir
-
Stir fry for approximately 1 minute so the masalas get nice and toasted
-
Next add in half a teaspoon of garam masala powder and squeeze some fresh lime juice
-
Add some red chili flakes (because I love hot food, you don’t have to add it) make some keto rice or Roti for yourself and enjoy!
