Ingredients
  • 14 ounces Firm Tofu (396g)
  • 1 tablespoon cooking oil
  • 1/2 teaspoon chaat masala (optional)
  • Dry Masala Mix
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon corainder powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon kashmiri red chilli powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (or to taste)
  • Green chutney
  • 1/2 cup corainder leaves
  • 1/2 cup mint leaves
  • 1 clove garlic (large)
  • 1 tablespoon fresh lime juice
  • salt (to taste)
  • 1 green chilli
Instructions
    Marinating tofu with dry rub
  1. Use Firm or extra firm tofu for this recipe. Drain the liquid from the tofu pack

  2. Place the tofu on a bunch of paper towels and press down on it to remove more liquid

  3. Place the tofu in the freezer for 1 hr.

Freezing and thawing tofu creates a network of pores in the tofu that helps it crisp up better when fried and also makes it more absorbent.
  4. Thaw the tofu and press out as much liquid as you can

  5. Cut the tofu in 8 slices and subsequently into 16 pieces (by making a perpendicular cut, refer to video)

  6. Make the dry masala mix (refer to the ingredients section)

  7. Cover the tofu pieces with the masala mix (on both sides)

  8. Spread the masala so it sticks well to the tofu. Set the tofu pieces aside to marinate and make the green chutney

  9. Making Mint Coriander Chutney
  10. In a grinder jar add mint leaves, coriander leaves, 1 large garlic clove, green chillies to taste, some lime juice and salt to taste

  11. Add some ice to the jar. (Adding ice to the blender jar helps the chutney maintain a vibrant green color.

  12. Add 1/4 cup of water and blend well

  13. Pour it out in a bowl

  14. Pan Frying Tofu
  15. Use a non stick pan for this recipe. Brush some oil (any neutral cooking oil) on the pan

  16. Heat the pan to a medium/high heat. Place the tofu pieces and cook till both sides turn golden brown

  17. You can drizzle some oil on the tofu before flipping it

  18. It should take approximately 5 min per side

  19. Sprinkle some chaat masala (optional)

  20. Dip the tofu in the green chutney and enjoy!
