Description

Nothing like starting your day with a cup of keto chai tea that is made of authentic Chai Masala. So fragrant and so comforting! I will show you how to make chai masala, that you can store for months!

(Net carbs per serving: negligible)

Ingredients
    Chai Masala (~20 servings)
  • 2 tablespoons Fennel seeds
  • 1 inch Cinnamon stick
  • 1/2 teaspoon Cloves
  • 1/2 teaspoon Black peppercorns
  • 2 tablespoons Green cardamom
  • 1 teaspoon Dry ginger powder
  • 1/2 Nutmeg
  • Keto Tea (2 cups)
  • 1.5 cup Water
  • 2 teaspoons Black tea leaves
  • 2 teaspoons Erythritol/monk fruit sweetener
  • 3/4 teaspoons Chai Masala
  • 1/2 cup DIY half and half (1/4 cup unsweetened almond milk + 1/4 cup heavy whipping cream))
Instructions
    Making Chai Masala Mix
  1. Dry roast all the ingredients (except ginger powder and nutmeg) on medium heat for 1 minute.

Dry roasting removes moisture from the spices so you can store the chai mix longer. Also, the spices turn more aromatic when dry roasted. Avoid roasting them too long so that the spices don’t taste bitter
  2. Let the spices cool down and transfer into a grinder jar along with ginger powder and nutmeg.

  3. Grind to a coarse powder. This stores for months in an air tight container

  4. Making Chai
  5. Add any sweetener of your choice to 1.5 cups of water

  6. Add black tea leaves and bring it upto a boil on medium heat

  7. Boil for 2 min. The longer you boil the more intense the taste of the tea

  8. Add the DIY half and half

  9. Add Chai Masala

  10. Bring it up to a boil and boil for another 2 min

  11. Turn off the heat and place the lid on for another minute before enjoying your tea
