How to make keto Indian dessert-Besan ki barfi with Lupin flour

This keto dessert tastes so much like besan ki barfi! 

Lupin flour has a very similar flavor to chickpea flour or besan. Lupin flour has a slight sour taste to it but it doesn't really affect the taste of the barfi. This sweet is very similar to a "non keto" Indian sweet. Enjoy this guilt free, with less than 1 g per piece!

  1. Powder the seeds of 2 green cardamoms

  2. Set it aside

  3. add lupin flour in a spice grinder and grind to a fine powder

  4. Set a non-stick pan on low/medium heat

  5. Add ghee

  6. Once the ghee melts, add finely powdered lupin flour

  7. Add a pinch of salt

  8. Roast the lupin flour, stirring continuously, till it turns brown in color

  9. After 5 min

  10. After ~12 min

    The flour should not taste raw or burnt. It should taste nicely toasted
  11. Turn off the heat and add cardamom powder

  12. Add a keto sweetener of your choice

  13. I used stevia powder

  14. This is a 5x5 inch glass container. You can use any container with a flat base. Grease the container with ghee so the barfi comes out easily

  15. In hindsight, instead of greasing a container, line it with cling wrap or parchment paper so the barfi can be taken out of the container and cut easily

  16. Pour the flour in the container (while it is still warm)

  17. Press down with a spoon and garnish with slivered almonds and pistachios. Let the barfi set at room temperature for 1 hr

  18. Dip a knife in hot water and wipe it with a paper towel

  19. Score the barfi with the knife into 9 pieces

    A warm knife helps in melting the ghee and cutting through the barfi easily. Cut the barfi while it is partially set, then continue to let it firm up for another hour.
  20. After the barfi is fully set, it is almost indistinguishable from besan ki  barfi.
