How to make Keto Idli-Eggless

Description

If you are craving soft and fluffy keto idlis for breakfast, this recipe if for you! This is a no egg no paneer recipe. Have this with some yummy coconut chutney!

Ingredients
  • 4 tablespoons Coconut Flour (I use the 365 brand from Whole Foods)
  • 2 tablespoons Almond Flour (I use the Kirkland brand from Costco)
  • 2 teaspoons Psyllium husk
  • 1/4 teaspoon Salt
  • 1/2 cup Hot water
  • 1 tablespoon Oil (I use avocado oil)
  • 1/2 teaspoon White vinegar
  • 1/8 teaspoon Baking soda (a pinch)
Instructions
  1. In a bowl combine coconut flour, almond flour, psyllium husk and salt

  2. Give it a mix

  3. Add hot water and stir (a quarter cup at a time)

  4. Add oil, vinegar, and baking soda

  5. Knead the dough with your fingers for 30 sec at least

  6. Grease a 2 tbsp. measure with some oil

  7. Divide the dough into 6 and shape each dough ball into a Idli using the 2 tbsp. measure as a mold

  8. Place the idli dough balls on a microwave safe plate

  9. Press down on the dough balls with your fingers slightly. (To shape them like idlis)

  10. Place them a little far apart because they expand a little when in the microwave

    Microwave on high for 1.5 min

    Do not steam the idlis in an idli maker! They turn slimy. Use a microwave oven
  11. The idlis should feel soft and spongy and not pasty

  12. The idlis stay soft even when cold. If you want to refrigerate them you can briefly warm them in a microwave oven and they turn soft again!

  13. Enjoy with coconut chutney
