Soft, fluffy eggless keto idli for breakfast!
How to make Keto Idli-Eggless
If you are craving soft and fluffy keto idlis for breakfast, this recipe if for you! This is a no egg no paneer recipe. Have this with some yummy coconut chutney!

Ingredients

In a bowl combine coconut flour, almond flour, psyllium husk and salt

Give it a mix

Add hot water and stir (a quarter cup at a time)

Add oil, vinegar, and baking soda

Knead the dough with your fingers for 30 sec at least

Grease a 2 tbsp. measure with some oil

Divide the dough into 6 and shape each dough ball into a Idli using the 2 tbsp. measure as a mold

Place the idli dough balls on a microwave safe plate

Press down on the dough balls with your fingers slightly. (To shape them like idlis)

Place them a little far apart because they expand a little when in the microwave
Microwave on high for 1.5 min
Do not steam the idlis in an idli maker! They turn slimy. Use a microwave oven -
The idlis should feel soft and spongy and not pasty

The idlis stay soft even when cold. If you want to refrigerate them you can briefly warm them in a microwave oven and they turn soft again!
