  2. Set a pan on medium heat. Place the fish filets, sprinkle some water (1/4 cup) and place the lid on until the fish cooks through  ~2-3 min

  3. Take the fish pieces out into a bowl

  4. Squeeze some fresh lime juice, add turmeric powder, cumin powder, coriander powder, garam masala powder, black pepper powder, salt and the herb paste

  5. Mix well (works best when mixed with your fingers)

  6. Add 2 tbsp. psyllium husk, mix well and set aside for 10 min to absorb moisture

  7. Make a fist with the mix and check if it holds its shape

  8. If not, add some more psyllium husk

  9. Check for salt and add more if needed

  10. Make ~9 cutlets (1.5 inch in diameter)

  11. Set a non stick pan on medium heat

  12. Add 2 tbsp. oil and brush to cover the surface of the pan

  13. Fry the fish till it’s golden brown and crisp on both sides ~4 min per side

  14. You can sprinkle some oil, if needed, to get a crisper coat

  15. If you want a crisper fish cutlet, press down the cutlet and flatten it on the pan. Fry until crisp ~5-6 min per side
