Here I share the recipes of keto almond flour cookies that are eggless.

Sweet cookies: Chocolate and Pistachio Cardamom

Savory cookies: Cumin and Ajwain (Carom seeds)

Ingredients

Cookie dough base (this is enough for 8x4 or ~32 cookies in total. The dough will be dividied into 4 for the 4 different flavors)

Chocolate cookies

Pistachio Cardamom cookies

Cumin cookies

Ajwain (Carom seed) cookies

  1. Melt butter in 15 sec bursts in the microwave oven or on a pan

  2. Add almond flour

  3. psyllium husk

  4. baking powder

  5. any keto sweetener of your choice

  6. water

  7. Combine to form a dough

  8. Divide the dough into 4 portions

Sweet cookies

  1. Add more keto sweetener to the doughs

  2. Add a splash of vanilla extract

  3. Add dark chocolate chips in one and slivered pistachios in the other

  4. Make a powder of cardamom seeds from one green cardamom pod

  5. Add that to the pistachio bowl

  6. Make a dough ball and refrigerate for 20 min

  7. Savory cookies

    Add a pinch of salt to both bowls

  8. Roast cumin seeds till fragrant 

    ~3 min on medium heat
  9. Add cumin seeds to the bowl and red chilli flakes to taste

  10. Add ajwain seeds and red chilli flakes to the other bowl

  11. Refrigerate dough ball for 20 min

  12. Roll out dough between parchment paper and cut out using 2 inch cookie cutters. The thickness of the cookies are ~1/2 cm. You should get 8-10 cookies (using the scraps)

  13. Top the chocolate cookies with more chocolate chips and the pistachio cookies with more slivered pistachios

  14. Press down a greased fork on the cumin or ajwain cookies to differentiate them from each other after baking

  15. Poke some holes with a toothpick to make the cookies more crisp.

  16. Place the savory cookies to bake on the lower rack near the heat supply so they crisp up more. Place the sweet cookies in the middle rack of the oven.

  17. Bake at 350 F or 180C for ~25-30 min or till the bottom of the cookies turns golden brown in color.

  18. The sweet cookies turn out crisp outside and slightly soft in the middle

  19. Bake the savory cookies for 2 min longer for a crisper texture

  20. The savory cookies turn out crisp and break with a snap

    Store the cookies in an air tight container at room temperature after they have cooled down completely
