How to make Keto chicken curry

Description

This chicken curry pairs well with keto roti, keto naan or keto rice!

Ingredients
    Marinade
  • 600 grams Chicken thighs (boneless (you can use with bone as well))
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon kashmiri red chilli powder
  • 1/4 cup plain unsweetened yogurt
  • 1 tablespoon fresh ginger garlic paste
  • 1/2 teaspoon salt
  • Other ingredients
  • 3 tablespoons Oil (I use avocado oil)
  • 1/2 teaspoon cumin seeds
  • 2 inches cinnamon stick
  • 100 grams Onion (sliced thin)
  • 100 grams Tomatoes (finely chopped)
  • 1 teaspoon Ginger Garlic paste (made fresh)
  • 1/4 teaspoon turmeric powder
  • 1.5 teaspoon coriander powder
  • 1 teaspoon kashmiri red chilli powder
  • 1 cup water
  • salt (to taste)
  • red chilli powder (to taste)
  • 1 teaspoon garam masala powder
  • 2 tablespoons coriander leaves
  • 2 tablespoons heavy cream (optional)
Instructions
  1. Cut chicken thighs into bite size pieces

  2. Marinate with turmeic powder, coriander powder, kashmiri red chilli powder, plain unsweetened yogurt, salt and fresh ginger garlic paste

  3. Marinate for 1 hr atleast at room temperature or up to overnight in the refrigerator

  4. Set a skillet on medium heat and add oil

  5. Add cumin seeds and cinnamon stick

  6. Add thinly sliced onion

  7. Stir fry for 1 min

  8. Add 1 tsp. fresh ginger garlic paste

  9. Stir fry for 30 sec and add turmeric powder, coriander powder and kashmiri red chilli powder

  10. Give it a quick stir. Add chopped tomato pieces with salt to taste.

  11. Stir fry the tomatoes till they turn mushy

  12. Add marinated chicken

  13. Stir fry the chicken for 5-7 min

  14. Add 1 cup water

  15. Place the lid and cook till the chicken turns tender

    ~5-7 min over low heat
  16. Add some more salt to taste

    Also add some more red chilli powder if you prefer
  17. Simmer the gravy for 3-5 min and add garam masala powder

  18. Add coriander leaves

  19. Add some heavy cream

    The curry tastes good as it is. You can add some heavy cream if you prefer a richer gravy
  20. Enjoy with keto roti or keto naan or rice
