This chicken curry pairs well with keto roti, keto naan or keto rice!

Cut chicken thighs into bite size pieces

Marinate with turmeic powder, coriander powder, kashmiri red chilli powder, plain unsweetened yogurt, salt and fresh ginger garlic paste

Marinate for 1 hr atleast at room temperature or up to overnight in the refrigerator

Set a skillet on medium heat and add oil

Add cumin seeds and cinnamon stick

Add thinly sliced onion

Stir fry for 1 min

Add 1 tsp. fresh ginger garlic paste

Stir fry for 30 sec and add turmeric powder, coriander powder and kashmiri red chilli powder

Give it a quick stir. Add chopped tomato pieces with salt to taste.

Stir fry the tomatoes till they turn mushy

Add marinated chicken

Stir fry the chicken for 5-7 min

Add 1 cup water

Place the lid and cook till the chicken turns tender
~5-7 min over low heat -
Add some more salt to taste
Also add some more red chilli powder if you prefer -
Simmer the gravy for 3-5 min and add garam masala powder

Add coriander leaves
-
Add some heavy cream
The curry tastes good as it is. You can add some heavy cream if you prefer a richer gravy -
