Keto Cauliflower Turmeric Rice is flavored with turmeric, onion, and ginger garlic paste. Pairs well with lots of Indian curries!

Cut the cauliflower in medium sized florets

Add the florets in a food processor jar with a regular blade attachment. Make sure the jar is not more than half full.
If you fill the jar to the brim, the florets on the bottom become pasty and some on the top don’t process down. -
Pulse the florets 10-12 times till they get a fluffy rice-like texture

Set a pan on medium heat and add oil and ghee

Add cinnamon stick, cardamoms, and bay leaf

Stir fry the whole spices for ~30 sec or until they turn aromatic

Add onion and crushed ginger/garlic

Stir fry the onions for ~45 sec or until the onions turn translucent

Add the riced cauliflower along with turmeric powder and salt to taste.

Stir fry the cauliflower for 5-6 min or until they turn soft and slightly golden brown

Add some fresh lime juice

Garnish with coriander leaves
