How to make Keto Cauliflower Curry-with Keto Poori

This cauliflower curry has the same spice profile as the aloo curry that is eaten with poori. Treat yourself with keto poori and this curry

Ingredients
  • 100 grams Cauliflower (small size florets)
  • 2 tablespoons Oil (I use avocado oil)
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon fennel seeds
  • a pinch hing or asafoetida
  • 1 teaspoon ginger (crushed)
  • 1 green chilli (sliced)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon kashmiri red chilli powder
  • 1/2 teaspoon coriander powder
  • 1/2 tomato (small (puree))
  • 1/2 cup water
  • 1/2 teaspoon ghee
  • 1 tablespoon coriander leaves
  • salt (to taste)
Instructions
  1. Cut cauliflower into small florets

  2. Set a pan to low heat and add oil

  3. Partially crush cumin seeds and fennel seeds using a mortar and pestle

  4. Add it to the oil 

  5. Once its starts to splutter add hing or asafoetida

  6. Add crushed ginger

  7. Add a slit green chilli

  8. Give it a quick stir and add turmeric powder

  9. add kashmiri red chilli powder

  10. add coriander powder

  11. give it a quick stir

  12. add tomato puree

  13. Stir fry the puree till it starts looking oily (~1-2 min)

  14. Add cauliflower florets

  15. Add salt to taste

  16. Mix well

  17. Add water

  18. Place the lid on and let it cook for 2 min

  19. Add salt if needed

  20. Mash some of the florets to thicken the gravy a bit

  21. Add ghee

  22. Garnish with coriander leaves
