This cauliflower curry has the same spice profile as the aloo curry that is eaten with poori. Treat yourself with keto poori and this curry
Cut cauliflower into small florets
Set a pan to low heat and add oil
Partially crush cumin seeds and fennel seeds using a mortar and pestle
Add it to the oil
Once its starts to splutter add hing or asafoetida
Add crushed ginger
Add a slit green chilli
Give it a quick stir and add turmeric powder
add kashmiri red chilli powder
add coriander powder
give it a quick stir
add tomato puree
Stir fry the puree till it starts looking oily (~1-2 min)
Add cauliflower florets
Add salt to taste
Mix well
Add water
Place the lid on and let it cook for 2 min
Add salt if needed
Mash some of the florets to thicken the gravy a bit
Add ghee
Garnish with coriander leaves
