How to make Coconut Flour at home

Almond Flour and Coconut Flour are the commonly used keto flours. Here I show you how to make coconut flour at home. If almond flour is too expensive (especially in India), making coconut flour is relatively inexpensive! You can make keto rotis with coconut flour, that pairs well with Indian curries.

Ingredients
  • 1 cup Coconut (Fresh or Frozen)
  • 1 cup Water
  • Keto Coconut Flour Roti
  • 1/4 cup Coconut Flour (homemade)
  • 1 tablespoon Psyllium Husk (I used the Sat Isabgol Brand)
  • 1/4 teaspoon Salt
  • 1/4 cup Water
  • 1 teaspoon Oil (I use Avocado Oil)
Instructions
  1. Add 1 cup coconut pieces (fresh or frozen) to a grinder jar along with 1 cup of water

  2. Grind to a paste

  3. Strain the paste through an absorbent cloth and squeeze out as much coconut milk as possible

  5. Spread the ground coconut on a baking tray lined with parchment paper

  6. Dry the coconut at 200F for 45 min

  7. Give it a stir every 15 min so the flour dries out thoroughly

  8. Let the coconut come to room temperature

  9. Transfer the coconut to a grinder jar

    Do not overfill the jar. That could lead to overheating and the flour could turn oily
  10. Pulse the flour 5-6 times, scrape off any flour stuck to the walls of the grinder jar and repeating pulsing until a fine powder is formed.

  11. Store coconut flour in the refrigerator or freezer in an air tight container

  13. Take 1/4 cup coconut flour in a bowl

  14. Add psyllium husk

  15. Add salt

  16. Add 1/4 cup of water 

  17. Mix well

  18. Rest the dough for 20 min

    Check if the dough comes together, if not add more water.
  19. Add oil and knead the dough

  20. The dough should feel non sticky

  21. Divide the dough in 2 parts

  22. Grease the dough with oil and roll it out using a rolling pin or a tortilla press

  23. Heat a pan to medium high heat

  24. Cook the roti till it turns golden brown on both sides. ~3 min per side

  25. The roti is soft and pliable
