If almond flour is too expensive (especially in India), making coconut flour is relatively inexpensive! You can make keto rotis with coconut flour, that pairs well with Indian curries.

Add 1 cup coconut pieces (fresh or frozen) to a grinder jar along with 1 cup of water

Grind to a paste

Strain the paste through an absorbent cloth and squeeze out as much coconut milk as possible

Spread the ground coconut on a baking tray lined with parchment paper

Dry the coconut at 200F for 45 min

Give it a stir every 15 min so the flour dries out thoroughly

Let the coconut come to room temperature

Transfer the coconut to a grinder jar
Do not overfill the jar. That could lead to overheating and the flour could turn oily -
Pulse the flour 5-6 times, scrape off any flour stuck to the walls of the grinder jar and repeating pulsing until a fine powder is formed.

Store coconut flour in the refrigerator or freezer in an air tight container

Add psyllium husk

Add salt

Add 1/4 cup of water

Mix well

Rest the dough for 20 min
Check if the dough comes together, if not add more water. -
Add oil and knead the dough

The dough should feel non sticky

Divide the dough in 2 parts

Grease the dough with oil and roll it out using a rolling pin or a tortilla press

Heat a pan to medium high heat
