How to make an Eggless Keto Cake-Keto Diwali Recipes

This is 1 serving eggless keto cake recipe that you can make in minutes using a microwave. The cake sponge is soaked in cardamom flavored heavy cream and garnished with pistachios. Diwali is around the corner and this is a perfect little treat for the occasion!

  1. Powder the seeds of a green cardamom using a mortar and pestle

  2. We will use half of this powder.

    If you like an intense cardamom flavor, you can use all of the powder.
  3. Soak 1 tsp. or 3g of slivered pistachios in some hot water.

    You can also use slivered almonds instead.
  4. Add 3 tbsp. pf heavy whipping cream into a small mason jar

    Do not shake the mason jar yet. We will do it later
  5. For this recipe I am using the monk fruit vanilla flavored liquid sweetener.

    You can use any sweetener of your choice
  6. 1/8 tsp. of this sweetener makes the icing milding sweet

    Add more if you have a sweet tooth
  7. Add half of the cardamom powder

    You can use the rest of the powder for chai! Add all of the powder if you like an intense cardamom flavor.
  8. Give it a stir and set it aside

  9. For the cake, you need 1/4 cup of lightly packed blanched almond flour.

    You don't have to weigh it!
  10. I use the almond flour from Costco

  11. Pour the flour into a microwave safe dish. This is a 3.5x3.5 inch pyrex dish.

    You can also use a mug instead.
  12. Add psyllium husk

  13. I am using the Sat Isabgol brand of psyllium husk

    You can find it any almost any Indian grocery store.
  14. Add a pinch of salt

  15. Add baking powder

  16. Give it a mix

  17. Add vanilla extract

  18. Add any neutral oil. I am using avocado oil

  19. Add any keto sweetener

  20. I am adding 2 tbsp. of hot water

    Add a tbsp. at a time. The quantity of water required could be different depending on the brand of ingredients you use.
  21. Mix well for a minute, till it turns into a thick paste.

  22. Level the batter

  23. Bake in a microwave for a minute on full power

    You can bake in 30 sec increments till the center is cooked
  24. The center should be dry to touch. The cake should also feel soft on the sides. Do not over cook it!

  25. This is just to show you what a soft and airy eggless cake you just made!

  26. Poke holes in the cake with a toothpick.

    Poke many holes
  27. Add ~3 tsp. of the heavy cream and let it seep into the holes

  28. Shake the mason jar vigorously for 30 sec to whip up the cream

  29. Ice the cake

    Make sure the cake has cooled down before adding the heavy whipped cream
  30. Drain water from the pistachios

  31. Garnish the cake with pistachios!

    You can enjoy this cake warm or chilled!
