Description

This is a keto cauliflower curry that combines the flavors of ghee, coriander, ginger and green chillies! Easy recipe and so flavorful!

Ingredients
  • 1 Cauliflower (large (~900g))
  • 3 teaspoons Cooking Oil (I use Avocado Oil)
  • 1 tablespoon Ghee
  • 1 tablespoon Coriander seeds (crushed)
  • 1/2 teaspoon Turmeric powder
  • 3 tablespoons Coriander leaves
  • 1/2 inch Ginger (cuushed)
  • 1/2 teaspoon Coriander powder
  • Salt (to taste)
  • Green chillies (to taste)
Instructions
  1. Partially crush coriander seeds using a mortar and pestle and set aside

  2. Set a pan on medium heat, add a tsp. of oil and a tbsp. of ghee

  3. Once the ghee melts, add the crushed coriander seeds and turmeric powder

  4. Give it a quick stir so the coriander seeds get toasted

  5. Add cauliflower florets (cut to similar sizes), add salt to taste and mix with the spices

  6. Add 2 tbsp. of water and place the lid on till the cauliflower cooks through (It should take anywhere from 3-6 min, depending on how tender the cauliflower is to start with)

  7. Move the florets to one side of the pan and add 2 tsp. of oil. Add chopped green chillies to the oil and give it a quick stir

  8. Mix the chillies with all the florets, add crushed ginger, coriander powder and mix

     
  9. Add salt to taste

  10. Stir fry the florets for 10-15 minutes till they brown nicely. You can add some more oil if necessary

  11. Turn off the heat and garnish with lots of coriander leaves
