This keto cauliflower curry in easy to make and very flavorful!
This is a keto cauliflower curry that combines the flavors of ghee, coriander, ginger and green chillies! Easy recipe and so flavorful!

Partially crush coriander seeds using a mortar and pestle and set aside
Set a pan on medium heat, add a tsp. of oil and a tbsp. of ghee
Once the ghee melts, add the crushed coriander seeds and turmeric powder
Give it a quick stir so the coriander seeds get toasted
Add cauliflower florets (cut to similar sizes), add salt to taste and mix with the spices
Add 2 tbsp. of water and place the lid on till the cauliflower cooks through (It should take anywhere from 3-6 min, depending on how tender the cauliflower is to start with)
Move the florets to one side of the pan and add 2 tsp. of oil. Add chopped green chillies to the oil and give it a quick stir
Mix the chillies with all the florets, add crushed ginger, coriander powder and mix
Add salt to taste
Stir fry the florets for 10-15 minutes till they brown nicely. You can add some more oil if necessary
Turn off the heat and garnish with lots of coriander leaves
