This keto chicken curry is one of the easiest recipes ever, yet turns out absolutely delicious!

You love chicken curry but are intimidated by the number of spices?! Alright then, you can now make delicious chicken curry (keto friendly) with store bought Chicken Masala (any brand works!).

Ingredients
  • 400 grams Chicken thighs (cut in 2 inch wide pieces)
  • 3 tablespoons Oil (I use avocado oil)
  • 3 tablespoons Onion (finely chopped)
  • 1 Tomato (small, chopped)
  • 1 tablespoon Ginger and Garlic (crushed)
  • 3 teaspoons Meat Masala (or any store bought chicken masala)
  • 1/4 teaspoon Turmeric powder
  • 2 teaspoons Red chilli powder (Kashmiri or Normal)
  • 1/2 cup Water
  • Coriander leaves (handful)
  • Salt (to taste)
Instructions
  1. Set a pan on medium heat and add oil

  2. Add onions with a pinch of salt, so they cook faster

  3. Cook the onions till they turn translucent (~45sec)

  4. Add crushed ginger/garlic and stir until the onions turn slightly golden brown (~1 min)

  5. Turn down the heat and add turmeric powder and 2 tsp. of chicken masala

  6. Stir fry the spices for ~1 min. You can sprinkle some water from time to time to prevent the spices from burning. Stir frying spices will make them a lot more aromatic

  7. Add tomatoes and red chilli powder. You can add normal red chilli powder instead of kashmiri red chilli powder if you prefer

  8. Stir fry the tomatoes till the turn mushy and ooze out some oil (~1 min)

  9. Add the chicken pieces along with another tsp. of chicken masala

  10. Turn up the heat to medium/high and stir fry the chicken for 5 min

  11. Add water and salt to taste

  12. Place the lid on and cook for 5 min (or until the chicken cooks through)

  13. Reduce the gravy to the consistency that you prefer

  14. Check for salt, add more if needed

  15. Add some coriander leaves, stir and simmer for a bit

  16. Garnish with fresh coriander leaves
