Take a break from regular scrambled eggs and try this keto egg curry recipe with spinach!
This keto spinach scrambled egg is spicy and delicious!
(Net carbs per serving: 3.4g)
Beat 4 eggs with some salt, pepper and set it aside
Set a pan in medium heat and add 2 tsp. oil
Add cumin seeds. Once the seeds start to splutter, add curry leaves, onion, garlic and green chillies
Stir fry till the onions turn translucent. This should take approximately 1 minute
Add tomatoes, turmeric powder, coriander powder, and stir fry till the tomatoes turn slightly mushy
Add spinach leaves, salt (to taste) and place the lid on for a minute, till the leaves wilt slightly
Stir fry the leaves until everything wilts
Move the spinach leaves to one side and add 4 tsp. of oil to the other sideĀ
Add eggs to the oil and stir fry till they cook through
Mix eggs with the spinach leaves
Add salt (to taste), garam masala powder, lime juice (to taste) and coriander leaves
Some red chilli flakes, quick stir and done!
